I joined some sommelier friends recently for a blind tasting session. Each of them have been trained using the Certified Sommelier Method, using a grid to break down a wine into its components for the purpose of analysis, then make an assesment about what the wine is. It was quite fascinating to watch them dissect wines blind, but still showed the subjectivity of wine.

Passion was the driving force behind Josh Elias and his desire to breathe new life into drinks with Alquimie Magazine. Much of this was due to the fact that his family have no background in wine, deciding to pursue a career in the industry rather than follow one in law which he has a degree in, or in textiles which is the family business. Josh joined me on this episode to talk about how he came to work in some of the best restaurants in Melbourne, furthered his wine knowledge and appreciation through study, and created one of the most exciting beverage publications in the world.

I’ll freely admit that I do have a habit of dining out and subsequently sharing pictures of food and wine on social media. In 2014 I’ve managed to cultivate a bit of a reputation, to the point where people ask if I even eat at home, let alone cook. I’m very fortunate that my job not only introduces me to some of the best restaurants in Melbourne and beyond, but also affords me the time and finances to head out and visit places. I’ve done pretty well in the last 12 months, so I thought I’d mention a few of the great experiences and dishes I had in 2014.
