A week away at the snow with my Dad requires some serious wines, so I took up two bottles of the iconic Cape Mentelle Cabernet Sauvignon from my cellar. I thought it might be interesting to open them both at the same time, and see how such an important red wine in the Margaret River develops, and how vintage conditions play a big part in that ageing process.
